Healthy and hearty meals!

*Here is a great healthy breakfast that is quick and easy. You can even send it on the go with your kids on busy mornings!

Breakfast Wraps
Ingredients:
2 eggs
2 egg whites
1 can of corn
1 tomato diced
1 cup zucchini, bell pepper, etc. (or any veggies of your choice)
¼ cup sliced green onion
4 oz shredded cheese
Salt and pepper to taste
8 warm tortillas (corn or flour)

Directions:
Beat together eggs and egg whites. Spray skillet with cooking spray and heat over medium heat. Add eggs and scramble. Salt and pepper eggs as desired. Stir in corn, tomato, veggies of choice, onions, and cheese. Spoon egg mixture down the center of tortillas; roll up and enjoy! You can pre-make burritos and refrigerate or freeze. Pop burrito into the microwave in the morning for 30 seconds or until cheese is melted.


*Soups are a perfect braces-friendly meal. Pair soup with some delicious corn bread and you will have a tasty meal your family will love.

Creamy White Chili
Ingredients:
1 lb. boneless skinless chicken breasts cut into ½ inch cubes
1 medium onion
1 ½ teaspoons garlic powder
1 Tablespoon oil
2 cans great northern beans, rinsed and drained
1 can chicken broth
2 cans chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon pepper
¼ teaspoon cayenne pepper
1 coup sour cream
½ cup heavy whipping cream

Directions:
In large saucepan, sauté chicken, onion, and garlic in oil until chicken is no longer pink. Add beans, broth, chilies, and seasonings. Bring to a boil.
Reduce heat; simmer, uncovered for 30 min.
Remove from heat; stir in sour cream and whipping cream. Garnish with fresh cilantro if desired.

Corn Bread
Ingredients:
1 cup melted butter
1 cup sugar
4 eggs
2 ½ cups buttermilk
½ teaspoon baking soda
2 teaspoons baking powder
1 cup corn mill
3 cups flour
2 teaspoons salt

Directions:
Combine all ingredients and mix well. Pour batter into 9x13in. pan or onto a cookie sheet that has a rim around it. Bake at 350* for approximately 40 minutes or until bread is cooked completely. Make sure to check center or the bread with a toothpick. Tooth pick should pull out clean with no batter when bread is done. Bread will be golden brown on top when done.

Fruit Smoothie-
Ingredients
Blueberries
Raspberries
Sweet Grapes
Strawberries
Sliced Apple
½ banana
Yogurt of your choice (vanilla Greek or regular is delicious)
OPTIONAL: supplement powder (protein, instant breakfast, etc.)

Preparation Instructions
Layer fruit in blender, add yogurt, a little milk, and supplement powder (if preferred). Top all with some ice, throw on lid and Blend!

There is no limit to the combinations you can add: mangos, blackberries, peaches…the list goes on. But things can get really interesting when you add vegetables with the fruit. Anything from spinach to carrots add not just extra nutrition, but some very interesting color results. Have fun with it!


Simple, Perfect Enchiladas!

Ingredients
FOR THE SAUCE:
• 1 Tablespoon Canola Oil
• 1 Tablespoon All-purpose Flour
• 1 can (28 Ounce) Enchilada Or Red Sauce
• 2 cups Chicken Broth
• 1/2 teaspoon Salt
• 1/2 teaspoon Ground Black Pepper
• 2 Tablespoons Chopped Cilantro

FOR THE MEAT:
• 1-1/2 pound Ground Beef
• 1 whole Medium Onion, Finely Diced
• 2 cans (4 Ounce) Diced Green Chilies
• 1/2 teaspoon Salt

FOR THE TORTILLAS:
• 10 whole (to 14) Corn Tortillas
• 1/2 cup Canola Oil
TO ASSEMBLE:
• 3 cups Grated Sharp Cheddar Cheese
• 1/2 cup Chopped Black Olives
• 1 cup Chopped Green Onions
• 1/2 cup Chopped Cilantro

Preparation Instructions
Step #1 – The Sauce
In a large saucepan over medium heat, add oil and flour and whisk together to make a paste, cooking for one minute. Pour in the red sauce, chicken broth, cilantro, salt and pepper. Bring to a boil. Reduce heat and simmer 30-45 minutes.

Step #2 – The Meat
Brown the meat with onions in a skillet. Drain off fat. Stir in 2 cans diced green chilies and seasoned salt. Set aside.

Step #3 – Tortillas
Heat canola oil in a small skillet over medium heat. One by one, using tongs, fry tortillas in oil until soft, not crisp – about 30 seconds per side. Remove to a paper—towel lined plate. Repeat until all tortillas have been fried.

Step #4 – Assembly
Preheat oven to 350 degrees. Pour ½ cup red sauce in bottom of baking pan. Spread to even out. Dip each tortilla into red sauce, then remove to work surface. Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Repeat until pan is filled. Pour extra red sauce over enchiladas. Top with remaining cheddar cheese.

Bake for 20 minutes or until bubbly. Sprinkle cilantro over enchiladas before serving.


Mushroom and Swiss Sliders with Spicy Fry Sauce
Let me just say these little burgers are absolutely delicious! They may clog your arteries but it is worth it. Plus, your kids will love them!


Ingredients
■1/3 cup Mayonnaise
■2 Tablespoons Ketchup
■1 teaspoon Cayenne Pepper (less If You're Sensitive To Spice!)
■4 Tablespoons Butter
■1/2 whole Medium Onion, Finely Diced
■8 ounces, weight White Mushrooms, Chopped Finely
■1/2 cup White Or Red Wine (optional)
■4 dashes Worcestershire Sauce
■Kosher Salt And Freshly Ground Black Pepper
■2 pounds Ground Beef
■4 Tablespoons Heavy Whipping Cream
■4 dashes Worcestershire Sauce
■1 teaspoon Kosher Salt
■Freshly Ground Black Pepper
■4 slices Swiss Cheese, Cut Into Four Squares
■8 whole Dinner (or Slider) Rolls, Split

Preparation Instructions
In a small bowl, mix mayonnaise, ketchup, and cayenne. Stir together until totally combined. Set aside. (This is the spicy fry sauce.)

Melt butter in a large skillet. Add onions and cook over medium heat for five minutes, stirring frequently. Add mushrooms and toss around, then add wine (if using), Worcestershire, salt and pepper. Cook for several minute over medium heat, or until all liquid has evaporated. Transfer mushroom mixture to a separate bowl, scraping all contents from the skillet.

Mix ground beef, heavy cream, Worcestershire, and salt and pepper in a bowl. Use your hands to thoroughly mix ingredients. Form 1/4 to 1/3 cup of the meat mixture into patties, making an indentation with your thumb to keep the patties from plumping too much when they cook. In the same skillet as the one used to cook the mushrooms, melt 1 tablespoon butter over medium to medium-high heat. Add four patties at a time, indented side face up. Cook for 4 minutes, then flip. Spoon generous portion of mushroom mixture on each patty, then top with one or two squares of Swiss, depending on your preference. Place lid on skillet and cook for an additional 2 to 3 minutes, until burgers are cooked through and cheese is melted. Remove to a place and keep warm while you repeat with the rest of the meat mixture.

Toast halved buns under the oven broiler. Spread generously with spicy fry sauce. Place patties between buns and serve immediately with fried onion strings.

Braces-Friendly Recipes!

Need ideas for braces-friendly meals? Here are this weeks suggestions for delicious, soft, and simple meals.

Whole Wheat Waffles

Ingredients:
1 1/2 Cups Wheat Flour
2 Cup Buttermilk
2 Eggs
1/4 Cup oil
1 teaspoon Baking soda
1 Tablespoon Baking Powder
1/2 teaspoon salt

Directions:
Mix all ingredients well, pour batter onto griddle or into a pan(use med heat on stove top) Wait until edges start to turn light brown and there are bubbles throughout the entire uncooked side of the pancake, then flip.
Makes about 12 pancakes

Maple syrup

Ingredients:
1 cup water
2 cups sugar
1/2 teaspoon maple flavoring

Directions:
Bring water to a boil and add sugar stirring constantly until sugar is completely dissolved. Once sugar is dissolved and water looks clear, remove from heat. Stir in maple flavoring. Best when served Hot. Refrigerate leftovers.


Chicken Fettuccine Alfredo

Ingredients:
1/8 Cup butter
1/8 Cup olive oil
1 lb. Chicken cut into 3/4 inch cubes
1/2 Cup chopped green onions
2 minced garlic cloves
1 Cup whipping cream
1/4 Cup Parmesan
12 oz mushrooms (thinly sliced)
1 15 oz can diced tomatoes (drained)
1 teaspoon salt
1/2 teaspoon pepper
1 Tablespoon dried basil
1 lb. cooked fettuccine (penne or bowtie works too)
1/2 Cup Parmesan

Directions:
Heat butter and oil in large skillet over medium heat. Add chicken, onion and garlic, sauté until lightly browned. Stir in cream, 1/4 c. Parmesan, mushrooms, tomatoes, salt and pepper. Bring to a boil over high heat. Reduce to medium heat and simmer for 3-5 minutes or until sauce is slightly thickened. Stir in Basil. Remove from heat. Toss pasta with sauce. Sprinkle with 1/2 c. Parmesan. Use more cheese if desired.

Shepherds Pie

Ingredients:
1 lb. ground beef
1/2 of a medium onion (chopped)
Lawry's season salt (to taste)
1 can green beans or corn
Mashed potatoes
Shredded cheese

Directions:
Cook and brown ground beef and onions. Season with season salt and pepper. Spread meat and onion mixture into 9x13 pan. Sprinkle with cheese. Pour can of desired vegetable on top of meat and cheese. Cover with mashed potatoes and top with cheese. Bake @350 for about 20 minutes or until bubbly and cheese is melted.
Serves 10


Bread sticks

Ingredients:
1 1/2 Cups warm water
2 Tablespoons sugar
1 Tablespoon yeast

Directions:
Mix together and let sit for 5 minutes.
Add 1/2 teaspoon salt and 3-4 Cups flour. Mix and kneed for 10 minutes. Let dough sit for 10 minutes.
Roll out dough into a 9x13 shape and cut into 1 inch strips.
Take 1/2 cube of melted butter and pour it onto the bottom of a cookie sheet. Roll bread sticks directly in the butter and leave on cookie sheet. Sprinkle with desired amount of Parmesan cheese and garlic salt. Let bread sticks rise for 20 minutes. Bake @ 375 for 20 minutes.
